Beef Jerky is salted and dehydrated strips of lean trimmed beef. This process prevents the growth of bacteria and spoilage for an extended period. Any other meat besides beef can be jerkied through this process as well, e.g. chicken meat to create Chicken Jerky or pork to create Pork Jerky.
